Mardi Gras is just around the corner, and being from South Mississippi, this is one of my favorite times of year! Fortunately I’ve developed a recipe that takes me right back to New Orleans–my crawfish etouffee. It’s a rich, creamy sauce full of Louisiana crawfish tails and mild cajun spices.
